Who Am I . . .
Bethany G. Cox
is a wife, a mom, a daughter, a sister, and a friend—just like many of you. Her personal struggles with dietary limitations were the driving force behind her majoring in nutrition and food science in college. Not only did she want to know more about her own health, but she also wanted to somehow help others experiencing similar issues.
However, her dream was put on hold while she pursued other areas of nutrition: working in the dietary services of a medical rehab hospital, working as a WIC nutritionist, teaching nutrition in a regionally known culinary arts program, running a Cooking Matters program, and more.
And while those were all amazing experiences, she recognizes they were designed to prepare her to follow her original dream of helping people with dietary limitations. But her heart isn't in joining the countless bloggers posting recipes online. Instead, her desire is to educate and support the friends and family of those with dietary limitations to help create spaces where people like her belong and feel loved.

Why I Had to Develop This Guide
Anytime I hear someone's story about feeling excluded—especially when it's the result of dietary limitations—my heart goes out to them. I feel their pain like it's my own.
Dietary limitations have been a part of my life since childhood, but even though they weren't very common back then, I don't remember wishing my life was different.
Instead, I remember wishing that people would find ways to include me, understand me, and help keep me safe, which I think is true for most of us as we're growing up (and even as adults). But, as you can imagine, it was hard and lonely experiencing the opposite of those things over something that was out of my control.
Now, as an adult, I know I want to help others like me, but there are already countless people writing to those with dietary limitations. And while I love seeing all the amazing resources they create, that isn't my passion.
My passion involves creating spaces where people like me can feel a true sense of belonging and love. My passion involves seeing people form bonds and connections that impact their lives. My passion is to help change legacies and build bridges.
Coming alongside you is one way I get to do all of that. See, partnering with you to create a place your loved one wants to be, and where they feel safe, helps us both give that person a really special gift. I get to touch two hearts at once.
That's the whole reason I created this guide. It's my way of standing in the gap and joining hands with you and your guest. It's my why for doing what I do.
